I didn't blog today...well not before now, duh, because I didn’t have much to share…
So generally when I don't have anything to share or rant about I go with a quote or recipe. Tonight I'll do both....
Recipe:
Italian Soup- This should really be considered a "Stew" but the recipe says soup, so I'll stick with that too.
I made this with the boyfriend a weekend or so ago. It was delicious. I think we ended up eating it for 3 different meals across the weekend. The night we made it, I liked it. When I had it as leftovers I LOVED it.
1 pound spicy Italian sausage, casings removed
1 cup chopped onion
2 cloves garlic, minced-- I left this out.
5 cups beef broth
1/2 cup water
1/2 cup red wine-- or a lil more :)
4 large tomatoes - peeled, seeded and chopped-- I did big chunks
1 cup thinly sliced carrots-- again, bigger slices
1/2 tablespoon packed fresh basil leaves
1/2 teaspoon dried oregano
1 (8 ounce) can tomato sauce
1 1/2 cups sliced zucchini-- big chucks make it more of a stew
8 ounces fresh tortellini pasta-- I boiled these normally, then browned them in a sauce pan to make them a little crispy on the outside (I trick I learned from my mama)
3 tablespoons chopped fresh parsley
- In a pan, brown sausage. Remove sausage and drain, reserving 1 tablespoon of the drippings.
- In a large pot, sauté onions and garlic in drippings. Stir in beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce, and sausage. Bring to a boil. Reduce heat; simmer uncovered for 30 minutes.
- Skim fat from the soup. Stir in zucchini and parsley. Simmer covered for 30 minutes. Add tortellini during the last 10 minutes. Sprinkle with Parmesan cheese on top of each serving.
So the bread sorta takes over the picture, but you get the idea...I hope!
Again, this soup, with a side of Garlic Bread, is great. After sitting in the refrigerator for a night, warming it up and enjoying it as leftovers, it is simply amazing! Enjoy!
