Another day in the life... or weekend rather...

Last weekend was fabulous. It was a mix of good food, catching up with friends, and relaxing. Friday night really kicked it off in the right direction when I had homemade chicken burgers with chunks of havarti cheese and stuffed mushrooms on the side.

The burgers are easy. Just combine ground chicken, a diced block of havarti cheese, a seeded jalapeno, and some black pepper. Cook each as a regular burger and bam! Done.


The mushrooms require a little bit more prep. First you have to cook chopped onion, garlic, zucchini, and the stems from the Portobellos down some. Then add chopped fresh basil and a little balsamic vinaigrette. Scoop the mixture into the Portobello tops and bake for 15 minutes at 375 degrees. They are delish!


Saturday was spent in serious relaxation mode. Slept late, got breakfast tacos, did some family time, RICK PERRY ANNOUNCED FOR PRESIDENT, took a long nap, went shopping, then had this for dinner....

Well my boyfriend had the huge plate; I had the smaller dish in the background. We went to Abuelo's over by Barton Creek Mall. I had avocado enchiladas and a Skinny Margarita. My boyfriend had the huge tour of Mexico, Monterrey Plate. Both choices were exceptional.


Sunday, after a morning workout, it was off to Barton Springs Pool. This Austin institution is always such a good idea. Despite the packed house, the water, at 61 degrees was nothing short of refreshing.

And to end the weekend, I went to Jack Allen's Kitchen for a small family dinner. After getting my usual Twisted Cobb salad with Champagne Vinaigrette, I ordered my favorite dessert in the entire world.... and oh no, I have no clue it's name. I always just say, "I want the banana dessert." So do that, go to Jack Allen's and get "the banana dessert." It is banana pudding-ish, with whipped cream on a snicker doodle crust. Trust me, it will not fail you.

So that was the weekend. It was really lovely. This weekend I will be shipping out to Costa Rica for an entire week, so better get to packing!
