MISSION ACCOMPLISHED

Well I did it. I did both actually. If you don't remember the goals, look here.

This is how it happened....

Friday evening my boyfriend decided to start getting all the dirt bike stuff ready for our big Saturday outing to the tracks. And since his brother was coming also, we would be taking 3 bikes. That is a lot of prep. From gas and parts to ice/water/gatorade and all the gear, he had plenty to keep him busy....and out of the kitchen....

So I started my quest for the perfect turkey and spinach lasagna. And I must say, I got damn close.

I started by browning a little over a pound of ground turkey.

While that was cooking, I mixed 15 oz of ricotta, a cup of parmesan cheese, 3 tablespoons of whipping cream, and 2 large eggs. (Also, now is a good time to preheat the oven to 375 degrees.)

Next, add a jar of spicy tomato sauce to the ground turkey meat, and let it simmer for 5 minutes or so.

While the meat simmers, add 10 oz of chopped spinach, and a teaspoon of oregano, basil and black pepper to the cheese mixture.

This is the fun part. In a 9x13 pan layer the noodles, meat sauce and cheese mixture, along with some additional parmesan and provolone cheese. Go in this order: meat sauce, noodles, meats sauce, cheese mix, sprinkle parm cheese and lay down some provolone then repeat. Then cover with foil. IMPORTANT: On the very top there must be sauce. I didn't do this and the top noodle layer was a bit crunchy (ok, not cooked at all in the middle and burnt on the edges, whatever.)

After 50 minutes at 375 in the oven, you must uncover the dish and cook it for an additional 20 minutes, then BAM! You get this delicious looking feast.

Add some garlic bread and you are ready to enjoy!

And enjoy we did!

So that's it! Turkey and spinach lasagna brought to you by Sara Marie. That particular recipe makes enough for probably 6-8 servings. (Thus, the boyfriend will be reliving the wonder several times this week, your welcome.)


And let's no get too wrapped up in my chef like abilities to forget about trying to be a "cool chick" on the track Saturday afternoon. That, I knocked out as well.

And while I did stall a few times on the SKS (the green bike in the back) I was the only girl out there, yet again, and I had a ton of fun. A successful weekend to say the least.
